The P.G.I. Asturian Beef distinguishes beef from cattle between 6 and 18 months old, from the native breeds “Asturiana de los Valles” and “Asturiana de la Montaña,” coming from animals born, raised, slaughtered, and processed in Asturias. Its Regulatory Council, a control body accredited by ENAC, guarantees consumers—through routine inspections of farms, slaughterhouses, cutting plants, and points of sale—that the product meets all the conditions that make it a product of proven quality and safety. The production of Asturian Beef follows traditional husbandry practices that are respectful of the environment and animal welfare during the rearing process. The animals are fed on their mother’s milk for at least the first five months of life, and their diet is supplemented with pasture, cereals, and legumes. Grazing is a fundamental part of the Asturian Beef rearing process, and this extensive farming system, together with the botanical characteristics of Asturian pastures, gives the product distinctive characteristics. All of this guarantees sustainable production and meat that is tender, juicy, and healthy, thanks to its high content of proteins of high biological value and low proportion of fats, with a notably high percentage of omega-3 fatty acids, which are beneficial and essential in the diet. ????, nearly 6,100 family-run livestock farms, distributed throughout Asturias, produce Asturian Beef, undeniably contributing to the preservation of the rural environment and Asturian landscapes. The Asturian Mature Beef Guarantee Mark, managed by the Regulatory Council of Asturian Beef, certifies animals over 18 months of age in their respective commercial categories (ox, cow, yearling, heifer, steer, and bull), extending controls to this type of more mature meat while maintaining the essence of its production system, based on the same requirements as Asturian Beef.
