Perlita caviar is sourced from our Acipenser baeri sturgeons, born and raised in Le Teich on the Arcachon Bay (Gironde, France). Its grains display shades from grey to light brown, with golden highlights. The creamy texture and flavors reminiscent of fresh walnut and hazelnut provide an exceptional lingering taste, delighting every palate.
Caviar Perlita, a family-owned company located in the southwest of France with 35 years of experience, manages the entire sturgeon cycle, from incubation to harvest. Thanks to its ecological commitment and a protected environment, it produces 3.5 tons of Baerii and Osciètre caviar annually. Its model allows for constant production year-round, with precise maturation and a 12-month shelf life. It is the only aquaculture farm certified ISO 22000, guaranteeing food safety, and holds the IGP Caviar d’Aquitaine, which certifies the quality and origin of its products.
