Pecorino cheese with a very old tradition, produced in Sicily with raw sheep's milk from indigenous breeds, enriched with self-grown saffron and pepper and matured for about 2 months. This cheese is a Slow Food Presidium.
The taste is sweet, with floral, fruity and spicy aromas: the presence of black pepper and saffron is evident.
Excellent tasted on its own or in cooking with fish or to finish a risotto.
