UMI is a tender Grey Mullet roe, marinated in Soy, rolled in Nori seaweed and pasteurized, with a very balanced umami that adds delicious marine notes to dishes from Mediterranean and Eastern cuisine: maki, gunkan and other types of sushi, in thin slices for appetizers and in small pieces in salads, ramen, pasta, pizza and rice. Nori seaweed is a superfood, the only plant source of vitamin B12. Tender bottarga has a low salt content and is an excellent source of omega-3 fatty acids and vitamins B12 and D.
