In 1917 the history of La Pasiega de Peña Pelada begins in the hands of Pasiega Brígida Ruiz. The flavor of these cheeses has endured throughout history. Today we are her great-grandchildren who continue the work in a modern factory in La Cavada (Cantabria), where the cheeses are made with the same recipes that Brígida used to make.
