Made following the Columela cheese conservation treaty. Payoya goat cheese, with three months of curing and forty days of malolactic fermentation. Macerated and injected with one of the most famous wines of the ancient world, rose wine, reconstructed by archaeologists and oenologists from Arqueogastronomía.
