Gildetas are a delicious innovation that takes the classic Basque pintxo to another level. This new variety masterfully combines the green olive and anchovy of the traditional gilda, but instead of the piparra, it incorporates a piece of red pepper, providing a sweet and vibrant touch. In addition, it adds the freshness of the anchovy in vinegar and the crunchy sweetness of the <strong>pickled onion. The result is a harmony of flavors and textures that delights the palate and celebrates the fusion between tradition and modernity.
