The project ‘A Slice of Quality - Choose PDO and PGI Deli Meats from Europe’ aims to promote the charcuterie sector and the European PDO and PGI quality labels and has chosen the Salón Gourmets to showcase high quality Italian charcuterie. Visitors will be able to get a close look at the versatility of products such as Mortadella Bologna PGI, Zampone and Cotechino Modena PGI and Salamini italiani alla Cacciatora PDO, by Gianluigi Ligasacchi, director of the councils. Each one of them has a different and unique personality, but they all have in common a number of differentiating elements, by virtue of their composition, their tradition or their place of origin.

On Tuesday 8 April from 10:00 to 14:00, the Plató Gourmets stage will host a show cooking by Ruben Fenollar where the public will be able to taste and get to know these cured meats produced in the regions of Emilia-Romagna, Piemonte, Lombardia, Veneto, Toscana, Le Marche, Lazio and the province of Trento, such as the Mortadella Bologna IGP with its characteristic aroma and slightly spicy flavour.

Salamini italiani alla Cacciatora PDO, whose production area covers the central-northern part of Italy from Friuli-Venezia-Giulia, Veneto, Lombardia, Piemonte, Emilia-Romagna, Umbria, Toscana, Le Marche, Abruzzo, Lazio and Molise, is one of the noblest cuts of pork.

The history of Zampone and Cotechino Modena PGI goes back more than 500 years and they are still prepared according to the ancient recipe: meat combined with rind and flavoured with pepper, nutmeg, cinnamon, cloves and wine. The production area is concentrated in the north of Italy and covers the entire territory of the Emilia-Romagna region; the provinces of Cremona, Lodi, Pavia, Milano, Monza and Brianza, Varese, Como, Lecco, Bergamo, Brescia and Mantova in the Lombardy region; the provinces of Verana and Rovigo in the Veneto region.
