Torta del Casar is a cheese made with raw sheep's milk from the merino and entrefino logs, whose coagulation is done with vegetable rennet from the Cynara cardunculus thistle, and whose maturation will be at least 60 days.  ONLY Torta del Casar in the world with HALAL certificate.  Among its many awards, the following stand out: Best soft cheese in GourmetQuesos 2020/21 and 2022, Super Gold in Worldcheese 2019/20 and Silver Medal in Worldcheese 2022/23.
