Assembly and disassembly

It is essential that exhibitors who order a space-only site, inform their decorators and/or stand constructors of these regulations, confirming that the deadline for the submission of the stand design and the ordering of services is Friday, March 6 2026.

After this date we cannot guarantee the provision of these services and the price will suffer a surcharge of 25%.

Access to exhibitors nor building/decoration companies will not be granted until the totality of the services has been paid.

Ifema’s Regulation from January 1 st , 2019 on:

  • Everyone involved in the setting up and tearing down of your trade fair must wear an approved safety helmet, high-visibility vest and safety footwear.
  • No access to the pavilions will be granted to any persons not wearing the items described. This applies to fitters, organisation staff, exhibitors, suppliers and any other persons having to pass through, remain at or work in the pavilions during the set-up and tear-down periods.
  • The items stated are the minimum required, which does not exclude the use of other protective elements depending on the specific tasks to be carried out (painting, welding, etc.).

The location assigned includes the floor area only (with the exception of schell-scheme, official design amd monographic areas, which include other elements in addition to the space booked). Exhibitors must therefore order the services they require via the Exhibitors Area, which can be accessed at the official show website www.gourmets.net/salon-gourmets.

Once their participation is official, exhibitors will receive a username and password that will allow them to order products and services they might require for their participation. Exhibitors must build a stand in the exhibition space booked. The Organizers are entitled to enforce compliance with this requirement should any company fail to make arrangements for a stand.

Exhibitors that wish to do so may make arrangements for stand assembly services for both modular and custom stands through the Exhibitor Area, which can be accessed via www.gourmets.net/salon-gourmets. Exhibitors may also order any additional services they wish through this system.

In the event of any defect or anomaly in these services, only claims which can be substantiated during the exhibition will be accepted. No claims will be accepted once the exhibition is over. Complaints may be made at the Organizers office.

1 - Space-Only stands 

Stand assembly Schedule will be from 08:30 am to 09:00 pm from Thursday April 9 till Sunday April 12, 2026. The stablished schedule cannot be extended.

Criteria for space-only stands:

  • The maximum height of stands is 4 m.
  • Walls facing a hall, cannot be closed more than 50%.
  • Logos and revolving signs may not exceed a maximum height of 5 m.
  • Peripheral stands may not exceed a total height of 6 m. In all cases, the approval of the Organizers must be sought for every design.

Obligations and prohibitions of the exhibitor hiring space-only stands:

  • Mandatory minimum Power Supply (130w/m 2): Exhibitors who do not hire stand nor fuse box through the Organizers, are obliged to hire power supply through the Exhibitors Area.
  • Exhibitors who reserve space-only sites may not use the partition walls of adjacent stands.
  • The back side of the panels must have a quality finishing according to the interior of the stand and also to the criteria and theme of the Salon Gourmets. Logos, neither signs nor any promotional items are allowed.
  • Stands open to 2 or 3 aisles, as well as single islands, must leave 0.5 m. between the limit of the stand and the aisle.
  • No stand may extend beyond the contracted space, either to the side or towards the front or rear.
  • In accordance with the fire regulations in force, all materials used for stand construction must be fireproof.

The technical project must be sent to the Organisation on the required dates for its approval, before February 28, 2025. (carmen@gourmets.net)

The exhibitor must hire, through the exhibitor area tool, the mandatory minimum power supply (130 W/m²), as well as any additional power or other services if necessary, before 6 March 2026.

Assembly & Dismantling

The interpretation and application of the rules concerning each case/stand, must have the approval of the Organization, therefore it is on their will, the possibility to create exceptions according the general purpose of the event and the visibility of neighbors stands.

2- Fitted stand, Official design & Monographic Exhibition Lounges

  • The decoration of shell-scheme stands may begin at 12:00 am. on Sunday, April 12, 2026.
  • A rotation system will be established for the delivery of goods with limited time allowed for delivery and a strict order of arrival for transport vehicles. Ifema Madrid and Salon Gourmets will indicate the correct access corresponding your location of stand.
  • All stands must be completed and decorated by 9:30 pm on Sunday, April 12, 2026.
  • Affixing anything, inserting screws or nails into or making holes in the walls, ceilings, floors or columns of the exhibition halls is not permitted. Exhibitors who fail to fulfill this rule must pay the cost of the damage.
  • We recommend the removal of the totallity of goods and material belonging to the exhibitor from 5:00 pm on Thursday, April 16, 2026. The Organizers will not be responsible for any goods or material which may disappear.

- The assignation of stands is not definitive until the corresponding fees have been paid in full. -

3- Dismantling of Stands

Stand dismantling schedule will be:

  • from 08:30 am to 9:30 pm on Friday, April 17, 2026 and from 08:30 am to 2:00 pm. on Saturday, April 18, 2026.

The established schedule can not be extended.

The removal of goods from the stands may not begin until 17:00 h. on Thursday, April 16, 2026 when Salon Gourmets closes.

All stands must be entirely dismantled and all parts and goods removed no later than 2:00 pm on Saturday, April 18, 2026. Should this not occur, the Exhibitor will be responsible for the payment of the levy imposed by IFEMA MADRID for the further rental of the space.

4- Removal of waste generated

Ifema Madrid’s general rules of participation specify:

Article 35.- Removal of waste and assembly and exhibition materials: In application of current legislation on urban waste, all Exhibitors, as well as companies contracted and/or subcontracted to carry out the assembly and/or dismantling of stands, are obliged to assemble, dismantle and remove the assembly, decoration and exhibition materials used, within the time periods established for this purpose. Once the time periods established for the exit of merchandise and decoration material have elapsed, such as those specifically established for stand dismantling, all materials still remaining in the exhibition areas of the pavilion shall be considered waste materials and shall be removed by Ifema Madrid, the Exhibitor losing all rights to claim for losses or damages to them, and the expenses related to their removal shall be borne by the Exhibitor, and shall be invoiced by Ifema Madrid in accordance with the rates established in the Rate Table (100 euros/m²), for the total square meters allocated. In the case of not dismantling the stand within the established period, the Exhibitor will pay Ifema Madrid the cost of carrying out this service in accordance with the budget provided by Ifema Madrid according to the work to be done.

All waste must be segregated and if there are different types, a container must be hired for each type of waste:

  • PAPER-CARDBOARD.
  • PLASTIC
  • ORGANIC.
  • GLASS.
  • OTHER.

If the rubbish bin does not contain the waste for which it has been requested, it will not be removed until its content is adequate.

The “Debris Removal Service” will be invoiced at 127,00 euros/m²

The shell-scheme stand constructor will begin the dismantling of stands at 8:30 am on Friday April 17, 2026.

In accordance with the legislation in force concerning urban waste, the Exhibitor is obliged together with any contractor to remove all waste created as a direct result of its activity at the end of Salón Gourmets. This includes materials used for the assembly of the stand, decoration, plastics, paint containers, etc. As a result, all Exhibitors, as well as companies contracted and/or sub-contracted to carry out the assembly or dismantling of stands are obliged to assemble, dismantle and remove materials used for the assembly of stands in the periods set aside for this purpose.

Once the time set aside for the dismantling of stands has passed, all materials remaining in the Pavilion will be removed by the Organizers. The Exhibitor thereby loses any right to any claim for losses or damage to articles. The relative costs incurred for the removal of any remaining materials will be charged to the Exhibitor by the Organizers in accordance with the rates set out in the Services Information Form.

5- Forbidden activities 

  • Any type of construction in areas defined as aisles of the exhibition center.
  • If your stand has an inspection panel it should be easily measurable.
  • Any type of modification, painting, peg fixing or drilling is strictly forbidden.

Important notes:

– We remind Exhibitors and construction companies, that access is strictly forbidden for people under 18 years during the celebration of Salón Gourmets as well as the assembly and dismantling.

– All companies carrying out the assembly of stands must insure all their personnel in accordance with the current regulations. The staff hired by a non-spanish company need a proof of identity (ID Card or Passport if they are EC members). The hiring companies of the mentioned staff are obliged to comply with the Spanish Labour Risk prevention law.
