L'Etivaz AOP: Limited production, produced in high mountain cheese dairies.

This unique Swiss cheese is only produced from May to October in the highest mountain areas. In the Alps, at an altitude of over 1,000 metres above sea level, the dairy cows graze freely among the flowers and the cheese masters, in small cheese dairies a short distance away, make cheese piece by piece this alpage cheese.
