Considered the rarest and most exclusive caviar, it comes from the world's largest sturgeon species, the Acipenser huso huso. It is as unusual as it is exceptional, with larger roe (between 3 and 4 mm) and a pearly color. On the palate, it has an extremely delicate, silky, and buttery flavor, with subtle marine notes that range from hazelnut to walnut, culminating in a symphony of flavors.
