This oyster requires maximum attention and is the result of rigorous selections throughout its growth, during which the strictest conditions defined by our firm for its breeding are met. Only our experience since 1930 allows us to decide exactly when the park should be moved from the salty waters of Marennes, where its breeding begins, to the cold waters and sandy beaches of Normandy, rich in phytoplankton where it will remain for its last year. Internationally recognized for its excellence, the Spéciale Daniel Sorlut oyster presents an exceptional, firm and unctuous meat, which is between 13 and 16% of its total weight. This oyster is preferred by the most prestigious chefs on the planet to present or cook to their clients. Recognizing it is easy: a singular delicate and melting texture as well as its meat, which is more abundant than in any other. In the mouth, its flavor envelops the entire palate. Iodized and tasty at first, it later reveals a peak of hazelnut flavor, ending with an almost sweet note. There are no words to exactly define the taste sensations that we can only experience by savoring it.
We are Oyster Producers, we supervise each stage of cultivation with mastery and exigency, controlling all technical aspects, selection, cleaning and packaging, thus guaranteeing the quality offered by the Daniel Sorlut brand.
Our cultivation takes place on the French coast of the Charente-Maritime region, right at the mouth of the Charente river, on the surface of the 3,000 hectare Marennes Oléron delta. For centuries this growing area has been the chosen one by oyster farmers. With shallow and calm waters, the algae have flourished profusely. Plots of salt water connected by a network of channels and fed according to the tides, the claires offer the optimal environment for our oyster to receive the necessary nutrients for its growth.
