Under the title ‘Gourmet Pairings: Essence of the Province of Ourense’, the Galician province showcased the quality of its local produce to visitors at the Salón Gourmets, as well as the outstanding work carried out by small-scale producers who strive daily to offer exceptional products.
With octopus taking centre stage, chef Paco Gómez, “Mestre Pulpeiro” – a specialist in traditional Galician cuisine and an expert in preparing octopus in its various forms, was the responsible for demonstrating the versatility of this product, which is the hallmark of Galician gastronomy.
