Gu Jaguar 2022. Single-vineyard red wine, Gredos. Made from Garnacha, Cariñena and Albillo Real.

  • It comes from the El Pinamoso vineyard, located at 900 meters above sea level with a southeast exposure, in San Esteban del Valle, Barranco de las Cinco Villas, Sierra de Gredos.
  • The soils are shallow granitic, with a slight presence of clay and permanent ground cover, over bedrock that varies across the parcel.
  • The vineyard is farmed manually using biodynamic practices, respecting the natural balance of the vines.
  • The wine is made from a blend of 30% Garnacha, 30% Aragonés, 30% a local red variety, and 10% Albillo Real.
  • Fermentation is spontaneous with native yeasts, and the wine is aged exclusively in bottle.

Garganta Organista is an author-driven winery located in the Tiétar Valley, in the Sierra de Gredos.

We work mountain vineyards situated between 700 and 1,100 meters above sea level, on granitic soils, mainly planted with Garnacha, producing single-parcel wines. Our approach is based on manual viticulture, low yields, and a strongly agricultural vision of wine. Fermentations are spontaneous, using native yeasts, always seeking balance, precision, and a true expression of place.

Our wines reflect the classic character of Gredos: light in body, tense, aromatic, and subtly saline, with a clear gastronomic focus and good aging potential. Production is very limited and aimed at markets that value origin, authenticity, and terroir.
