Fugitivo 2025. Single-vineyard red wine, Garnacha, Garnacha Tintorera, Cariñena y Tempranillo.

  • Fugitivo comes from a vineyard in San Esteban del Valle, in Gredos.
  • The vineyard has a south-facing exposure at 850 meters above sea level. It is cultivated on terraces, in narrow plots, on shallow granitic sandy soils, surrounded by maritime pine, chestnut, ash trees and low scrub.
  • The vines, with an average age of 55 years, are planted with a varietal mix of 50% Garnacha, 30% Cariñena, 15% Garnacha Tintorera and Tempranillo.
  • The vintage was marked by a rainy spring and a cool, dry summer. Harvest took place on September 1st and 2nd, at dawn, in 17 kg boxes.
  • In the winery, a hybrid vinification was carried out, combining whole clusters, foot-trodden grapes, free-run juice and pressing.
  • Fermentation was spontaneous with indigenous yeasts in stainless steel, followed by natural clarification during the winter cold before bottling.
  • The wine shows intense youthfulness, with fresh red fruit, an herbal background and good tension. On the palate, it is long, with vertical acidity and sandy-textured tannins.

Garganta Organista is an author-driven winery located in the Tiétar Valley, in the Sierra de Gredos.

We work mountain vineyards situated between 700 and 1,100 meters above sea level, on granitic soils, mainly planted with Garnacha, producing single-parcel wines. Our approach is based on manual viticulture, low yields, and a strongly agricultural vision of wine. Fermentations are spontaneous, using native yeasts, always seeking balance, precision, and a true expression of place.

Our wines reflect the classic character of Gredos: light in body, tense, aromatic, and subtly saline, with a clear gastronomic focus and good aging potential. Production is very limited and aimed at markets that value origin, authenticity, and terroir.
