The sirloin is one of the most demanded pieces. Its shape is elongated and cylindrical, and it is located between the lumbar ribs, at the back of the loin. It stands out for being a very lean, juicy and clean meat. It has almost no fat infiltration compared to other pork cuts.
Dionisio Sánchez initiated its trajectory in the 40s with a clear vocation for respect for the product and quality. In 2004, the second generation boosted innovation in the pork sector through the development of their own genetics.This gave birth to Konduroc, an improved Duroc crossbreed, and KachaNegra, a 100% Duroc lineage. Both are raised in farms certified in Animal Welfare, with controlled growth that allows for obtaining meats of high infiltration, juicy texture, and great taste. This specialization is complemented by a solid experience in Ibérico pork, based on origin and excellence.
