Un producto artesano, totalmente natural y 100% ecológico.Buena conformación, tripa adherida y óptima coloración. La grasa bien repartida y correctamente ligada con las partes magras. Predomina el tono en los magros y blancos sonrosados en las grasas, muy bien distribuidos en porcentajes y texturas uniformadas. Aroma y sabor agradables y persistentes. Excelente punto de sal, ligeramente bajo. Sabor suave, agradable, con notas complejas en el retrogusto a pimientas. Textura muyconsistente, aunque predominan las notas de jugosidad.
