100% Palomino.  Fermentation of the wort, addition of wine alcohol until reaching an alcohol content of 15% vol. Complete biological parenting and begin the process of oxidative ageing through the traditional solera sherry system and criaderas in casks of American oak for more than 20 years. Alcohol content: 19.5% vol. Tasting notes: Amber in colour with greenish and brilliant. Of great intensity, piercing, they remain the notes of biological ageing, it presents spicy creams, to nuts such as almonds, liquorice and wood. Pairing: Mexican food, artichokes or asparagus, rice, fish and Japanese food.  
Cayetano del Pino is a winery founded in Jerez de la Frontera in 1886 by Cayetano del Pino, a 140-year-old family legacy. In 2022, the winery was acquired by a new owner, Fulgencio Meseguer, who has managed to maintain the essence and character that has always defined his wines, respecting their tradition and legacy. Throughout its history, the almacenista stage - an intermediate phase in the evolution of the winery - has been decisive in defining the personality of its wines. During this period, the high concentration of nutrients, the result of natural evaporation in the winery, has contributed to giving them a unique complexity.
