Jerez. 100% Palomino. Fermentation of the must, addition of wine alcohol up to 15% vol. Its biological ageing ends and the wine alcohol is increased to 17% vol. Oxidative aging begins in the solera and criaderas system Alcohol content 21% vol.  Amber in color, with greenish and bright edges.  Intense, slightly pungent aroma, with subtle hints of biological ageing with aromas of hazelnuts, tobacco and noble woods. On the palate it is intense, warm and dry. Of great persistence, it has notes of nuts and wood and a long aftertaste of liquorice. Pairing: nuts, cured cheeses, oxtail, cheeks or game meats.
Cayetano del Pino is a winery founded in Jerez de la Frontera in 1886 by Cayetano del Pino, a 140-year-old family legacy. In 2022, the winery was acquired by a new owner, Fulgencio Meseguer, who has managed to maintain the essence and character that has always defined his wines, respecting their tradition and legacy. Throughout its history, the almacenista stage - an intermediate phase in the evolution of the winery - has been decisive in defining the personality of its wines. During this period, the high concentration of nutrients, the result of natural evaporation in the winery, has contributed to giving them a unique complexity.
