Designation of Origin: Jerez-Xérés-Sherry.Grape: 100% Palomino. Winemaking: Fermentation of the must, addition of wine alcohol until an alcohol content of 15% vol. Its biological ageing in sobretablas is finished and the wine alcohol is increased to 17% vol. From then on, the oxidative ageing process begins using the traditional system of solera sherry and criaderas in American oak casks for an average of 18 years. Alcohol content: 20% vol. Tasting notes: Amber in colour with greenish and bright edges. Intense and slightly sharp, warm in the mouth, dry and velvety. It has notes of nuts and wood. Pairing: Perfect for pairing with stews, meats, especially game, cheeses and chocolates.
Cayetano del Pino is a winery founded in Jerez de la Frontera in 1886 by Cayetano del Pino, a 140-year-old family legacy. In 2022, the winery was acquired by a new owner, Fulgencio Meseguer, who has managed to maintain the essence and character that has always defined his wines, respecting their tradition and legacy. Throughout its history, the almacenista stage - an intermediate phase in the evolution of the winery - has been decisive in defining the personality of its wines. During this period, the high concentration of nutrients, the result of natural evaporation in the winery, has contributed to giving them a unique complexity.
