 Jerez. Grape: 100% Palomino. Fermentation of the must, addition of wine alcohol up to an alcohol content of 15% vol. It completes the biological ageing and begins the oxidative ageing process using the traditional Solera and Criaderas Sherry system for an average of 18 years of ageing. Alcohol content: 19% vol.  Amber in color with greenish and bright edges. Intense and sharp, with a lot of notes of biological aging and nuances of almond and wood. Fresh, persistent and dry, with hints of yeast, hazelnuts and wood.  Recommended with Mexican food, vegetables such as artichoke or asparagus, rice, fish and Japanese food.

Cayetano del Pino is a winery founded in Jerez de la Frontera in 1886 by Cayetano del Pino, a 140-year-old family legacy. In 2022, the winery was acquired by a new owner, Fulgencio Meseguer, who has managed to maintain the essence and character that has always defined his wines, respecting their tradition and legacy. Throughout its history, the almacenista stage - an intermediate phase in the evolution of the winery - has been decisive in defining the personality of its wines. During this period, the high concentration of nutrients, the result of natural evaporation in the winery, has contributed to giving them a unique complexity.
