 100% Palomino.  Fermentation of the wort, addition of wine alcohol up to 15% vol. Complete biological parenting and Oxidative ageing begins in the Solera and criadera system. Alcohol content 20.5% vol. Bright, amber in color, with piping Greenish. Very intense, slightly stabbing, with memories of the yeasts of biological ageing, nuts with a predominance of almonds, and elegant notes of tobacco and lightly toasted wood. Powerful, dry and of great persistence with notes of almond, tobacco, wood, and a long and pleasant aftertaste of cocoa lightly toasted.  Especially recommended with Mexican food, stews, rice and fish.
Cayetano del Pino is a winery founded in Jerez de la Frontera in 1886 by Cayetano del Pino, a 140-year-old family legacy. In 2022, the winery was acquired by a new owner, Fulgencio Meseguer, who has managed to maintain the essence and character that has always defined his wines, respecting their tradition and legacy. Throughout its history, the almacenista stage - an intermediate phase in the evolution of the winery - has been decisive in defining the personality of its wines. During this period, the high concentration of nutrients, the result of natural evaporation in the winery, has contributed to giving them a unique complexity.
