FORTIFIED LIQUEUR WINE. PALOMINO AND PEDRO JIMENEZ GRAPES

 Jerez.  80% Palomino and 20% Pedro Ximénez.  Must fermentation, addition of wine alcohol up to 15% vol. Biological ageing begins and this is stopped by adding wine alcohol up to 18% vol. It begins its oxidative aging process in the criaderas and solera system.  It is mixed with PX aged by the criaderas and solera system. Alcoholic: 17.5% Vol. Chestnut color with amber and bright rims with notes of raisins, hazelnuts and wood. On the palate it is warm, sweet and velvety, good balance.  Good persistence in the mouth. Ideal with fruit, pastries or ice cream. Foi gras, old and blue cheeses.
Cayetano del Pino is a winery founded in Jerez de la Frontera in 1886 by Cayetano del Pino, a 140-year-old family legacy. In 2022, the winery was acquired by a new owner, Fulgencio Meseguer, who has managed to maintain the essence and character that has always defined his wines, respecting their tradition and legacy. Throughout its history, the almacenista stage - an intermediate phase in the evolution of the winery - has been decisive in defining the personality of its wines.
