100% PALOMINO SHERRY FORTIFIED WINE. BIOLOGICAL AGING.

100% Palomino Sherry. Winemaking: Fermentation of the must, addition of wine alcohol until an alcohol content of 15% vol. Ageing under the biological ageing process using the traditional system of Jerez de solera and criaderas for about 8 or 9 years on average. Alcohol content: 15.5% vol.  Light in color, with greenish and bright edges. On the nose it is intense, fine and pungent with aromas of biologically aged yeasts. Notes of almond and quince. On the palate it is warm and dry, without acidity.  Ideal to enjoy with Iberian ham, cheeses, seafood, meat, vegetables and fish.  
Cayetano del Pino is a winery founded in Jerez de la Frontera in 1886 by Cayetano del Pino, a 140-year-old family legacy. In 2022, the winery was acquired by a new owner, Fulgencio Meseguer, who has managed to maintain the essence and character that has always defined his wines, respecting their tradition and legacy. Throughout its history, the almacenista stage - an intermediate phase in the evolution of the winery - has been decisive in defining the personality of its wines. During this period, the high concentration of nutrients, the result of natural evaporation in the winery, has contributed to giving them a unique complexity.
