Produced exclusively from Picual olives harvested at their optimal (early) stage of ripeness, when the fruit is still green to ensure the highest concentration of antioxidants and aromas. Medium fruitiness with predominant notes of tomato and aromatic herbs, especially spearmint.

Appearance: Intense emerald green color, clean and bright.
Nose: Highly complex aroma. Prominent notes of tomato plant, freshly cut grass, green wheat, artichoke, and banana peel.
