Palomino Grape Spirit Production Process
Our Palomino grape brandy follows a meticulous, artisanal process that enhances its complexity and character. We began with a 3-month fermentation on the skins, after which pressing was carried out, resulting in a wine of 11% vol. Subsequently, the wine rested for 2 years in stainless steel tanks, developing a stable and rich flor veil, which naturally protected it from oxidation and gave it unique nuances.having not added sulphites at any time, we checked before distillation that the acidity was high. This factor, far from being a hindrance, added complexity to the distillate. However, in order to balance its aromatic profile, we made a wider cut of heads, thus ensuring a distillation heart with greater intensity and depth of flavours.
