PDO RONCAL CHEESE ELABORATED FROM RAW SHEEP´S MILK

Elaborated from raw milk of latxa sheep, Roncal cheese is a cylindrical shaped cheese, with a thick rind, compact and delicately tailored, closed but splattered with small regular shaped holes. It is the colour of white marble going on pale yellow with a strong pronounced flavour, lightly hot, very defined and creamy on the pallet. In its production, only milk, curds and salt may be used and so it never loses its characteristic taste and smell.
Since 1978 Quesos La Vasco Navarra, located in the north of Spain, elaborates and handles dairy products.
