Led by Susana Framit, the heart and soul of Quesos Edén, we will explore how ferments act in the maturation of cheese, influencing its flavour, structure and final quality. With a career that combines her training as an Agricultural Engineer with her passion for food (Master's degree in Environmental Engineering and later in Cellular Nutrition and Diet Therapy), Susana has perfected her knowledge with great refiners in Spain and France, always committed to innovation, respect for the environment and excellence in each cheese.
