Artisan cured cheese in red wine with flower petals

The cheese is made with raw sheep's milk. It is refined with natural rind, after 5 months of curing it is macerated in wine for a month until it is 6 months old, at which time it is covered with a rind of flower petals.

The cheese that remains for a month macerating in wine, gets subtle reminiscences of wine flavor and aroma, although the flavor of the cured cheese predominates in a balanced way.

The outer rind with flower petals has two objectives. Mainly to provide floral aromas that complement an excellent organoleptic sensation, making it a sophisticated cheese for the palate. And, on the other hand, to coat it in an elegant way for a perfect presentation.

With a firm interior where the purple veins of the wine stand out and are introduced towards the interior.

The soft and creamy texture stands out for its delicate flavor and aroma, where the nuances of cheese and wine harmonize subtly to achieve a modern cheese, with an exquisite palate.


Pago Valle de los Molinos, is located in the heart of the Montes de Toledo. Taking advantage of the natural resources of the farm, it obtains oil and nuts of the highest sensory quality. All this under a deep respect for nature. 

It elaborates its cheeses handmade from sheep's milk exclusively from our farm, according to the traditional process of the Montes de Toledo. The exquisite flavor and the singular creaminess of the cheese are the result of the studied feeding that our ewes receive from the livestock. 

We also offer our nuts directly from the field, under its integral production model, with strict quality protocols. A product with the highest standards of organoleptic and technological quality.

The farm has a high biodiversity and richness, which is why it is protected as a site of special community interest and regulated under Directive 92/43/EEC, Red Natura 2000.
