Aged Artisan Cheese, made with raw sheep's milk.

The aged cheese is handmade with raw sheep's milk. It takes 12 months of maturation and refining in the cellar to achieve a cheese with a firm texture and a golden straw color. The long and slow process of refining allows the exaltation of its powerful flavor and aroma. A delight for lovers of noble and prominent cheese.

Pago Valle de los Molinos, is located in the heart of the Montes de Toledo. Taking advantage of the natural resources of the farm, it obtains oil and nuts of the highest sensory quality. All this under a deep respect for nature. 

It elaborates its cheeses handmade from sheep's milk exclusively from our farm, according to the traditional process of the Montes de Toledo. The exquisite flavor and the singular creaminess of the cheese are the result of the studied feeding that our ewes receive from the livestock. 

We also offer our nuts directly from the field, under its integral production model, with strict quality protocols. A product with the highest standards of organoleptic and technological quality.

The farm has a high biodiversity and richness, which is why it is protected as a site of special community interest and regulated under Directive 92/43/EEC, Red Natura 2000.
