Today we will taste one of the oldest traditional dairy recipes: Cloud cheese from Moncedillo, a small artisan cheese factory in northeast Segovia. Along with this hand-kneaded dairy cheese, the Juan Sanz Bakery, whose origins date back to the late 19th century, will offer a traditional bread made with stone-ground flour. To finish, we will add a sweet touch with shortbread.
