The Presa Ibérica is a muscular piece formed by the serratus vertebralis thoracis and cervical muscles. It has a pyramidal shape and is found hugging the upper part of the shoulder. It is one of the star cuts of the Iberian pig and one of the most popular with consumers, mainly due to its balance between texture, juiciness and intramuscular infiltration.
