Under the Volcanic Experience brand, the Government of the Canary Islands promoted local products and gastronomy linked to Canarian tradition and culture, with a differentiating element, the volcanic soil of the islands. From cheeses, potatoes or tropical fruits, to gofio or black Canary Island pork, not forgetting its volcanic wines, all these typical Canary Island products are just some of the gastronomic treasures that the islands have to offer.
A sample of these products was present at the Salon Gourmets on Monday 7 April in the Gourmets Forum, the stage located in hall 3. Showcookings with local products and tastings with volcanic wines and chocolate will be some of the activities that can be enjoyed throughout the day.

11:00 to 12:00 Title: Marine Biodiversity in the Canary Islands.
Embarked on a journey through the sea to discover some of the species inhabiting Canary Island waters. This exploration will not only highlight their importance in fishing and fishing grounds but also their gastronomic and environmental value. Led by Chef Alberto González Margallo, you was learn how to utilize every part of the product, enhancing its flavor and reducing waste. The experience will be complemented by a pairing with volcanic wine from the Canary Islands, enhancing the essence of the territory.
12:30 to 13:30 Title: A Sensory Journey Through the Sea of the Canary Islands
Chef Alberto González Margallo continued the sensory journey, awakening taste, touch, and smell to transport us to the Canary Islands and their seas. The focus was on local products, elevated them to haute cuisine through techniques that serve to amplify flavor. A tribute is paid to the heroic agriculture and viticulture of the Canary Islands.

15:00 to 17:00 Title: El Grifo: 250 Years of Stories to Tell
A tasting focused on the evolution, innovation, and tradition of Bodegas El Grifo. Participants tasted eight wines in celebration of the winery's 250th anniversary.
17:30 to 18:30 Title: Wines & Chocolates from the Canary Islands: A Volcanic Pairing.
An exclusive experience where the volcanic richness of the Canary Islands was expressed through the pairing of wine and chocolate. Renowned communicator and sommelier Meritxell Falgueras and prestigious pastry chef Carmen Capote, CEO and executive chef of 24 Onzas, conducted this unique tasting event.
