Competition Rules
Galicia is the cradle of hake on a skewer par excellence, both nationally and internationally thanks to the exceptional quality of its product. Directly from the Galician fish markets to the Salon Gourmets, this Championship organised by the Xunta de Galicia promotes the excellence of Galician hake on a skewer as a star ingredient in haute cuisine, highlighting its flavour, quality and versatility, while paying tribute to Galicia's sustainable fishing tradition.
Each of the 6 participants had a hake that they have to clean and use to prepare a recipe of their own creation. The rest of the ingredients were free to choose, although at least two of them had to be products endorsed with the Galician seal of differentiated quality. The contestants had 45 minutes to prepare 7 portions of their recipe.
The professional jury assessed aspects such as flavour, the prominence of the hake on the skewer, originality, technique and presentation, among others. The best recipe won first place in the Merluza do Pincho Challenge by Xunta de Galicia, promoted by the Consellería do Mar.
