White tuna, also known as Albacore or Longfinned tuna, is a species of blue fish that migrates, between June and September, to the Cantabrian Sea from the Atlantic Ocean, during which time its fishing season, known as "Costera del Cantábrico", takes place. The white tuna belly corresponds to the ventral part of the fish, characterized by its texture, juiciness and intense flavor.
At Frinsa, the white tuna belly is made from the best specimens of White Tuna, caught one by one during the Costera. The white tuna belly is canned fresh as soon as it arrives from the fish market, without prior freezing, and in whole pieces to prevent the fat between the slices from oxidizing, thus preserving all the flavor. As an accompaniment, it only has extra virgin olive oil that covers the product and improves its flavor over time.
