The southern mackerel is a blue fish of the scombridae family characterized by its greenish back and darker lines and spots. During the winter it lives in the depths and in spring it rises to the surface to feed, this is when the fishing season takes place. At Frinsa, this fish comes exclusively from the Atlantic coasts of the Iberian Peninsula from previously selected specimens. After cooking and manual cleaning, the mackerel is canned (by hand) and drizzled with Ecologic Extra Virgin Olive Oil.
