The clam is a bivalve mollusk that lives in salty waters buried in the sand a few centimeters from the surface. It is caught from small boats with the help of special long rakes called "raños".
Frinsa clams come exclusively from the Galician estuaries and, after being purchased at the fish market during the fishing season, they are subjected to purification processes to eliminate as much sand as possible and preserve their characteristic flavor. They are, then, chipped off one by one, removed from their gills and packed manually in homogeneous layers, adding only a covering liquid based on water and salt.
