SAELÍCES FLOWER OF SALT (SPRING SALT) 1 KG

Spring salt, collected in the Saelices de la Sal salt pans (Guadalajara) and therefore is free of microplastics and heavy metals that are increasingly common in marine waters. The flower of salt is a thin layer of salt that forms on the surface of the pools, due to thermal contrast between the temperature of day and night, due to the cooling of the brine that reduces its solubility and promotes massive precipitation (crystallization) of small crystals of salt rich in magnesium and fluorine that, due to the lower density of the brine, remain on the surface forming a fine membrane of tiny salt crystals. Due to its gastronomic and organoleptic value, they make this salt the "gourmet" salt par excellence. It is harvested according to very traditional techniques and in an artisanal way.

DeSpelta is a company that mainly transforms cereals from the Francisco Juberias organic farm in the Palazuelos plains (Sigüenza-Guadalajara), into organic flour and pasta.

All the wheats we use are ancient and the flours are ground whole grain in stone mills. This guarantees its properties, a great flavor. Being cereals that provide health, as the germ, bran and endosperm are in the flour.

We make the pasta in our workshop and are made from semi-wholemeal flour and semolina made from Spelled Wheat, Giganton Rye and Black Wheat, the latter wheat recovered by us and which we only market from Despelta, being the wheat that was sown in this area of Castile from very old.

Being an ecological farm, we use crop rotation as a regenerative element for the soil, which is why we can offer quality organic legumes, these provide nitrogen to the soil so that we can later have good cereals.

DeSpelta is ecology, because all its products are organic, it is ethnographic, because we recover the miller's trade in the Sigüenza area, it is quality gastronomy, our products are highly recognized among the best bakers in Spain and we want you to take home a little from our land, directly from the producer.
