URGÈLIA (PDO Cheese from Alt Urgell and Cerdanya). Washed rind cheese

Urgèlia is the only cheese in Catalonia to be recognised with a Protected Designation of Origin (PDO Alt Urgell and La Cerdanya Cheese) thanks to its excellent quality, guarantee of origin and our long-standing tradition of cheese-making. It is made using fresh pasteurized cow's milk, collected daily by our cattle herders in the Pyrenees, an area of tremendous natural beauty and lush green pastures. The cheese has a tender, creamy, texture and a mild, balanced flavour. The traditional ripening process allows it to develop aromas with notes of roasted nuts, moss and wild mushrooms.
The Cadí, founded in 1915 and situated in La Seu d'Urgell, was the first cooperative dairy to be created in Spain. Since then it has played a fundamental role in providing work and stability to the people in the Pyrenees. The Cooperative thrives on the milk produced by its members who are farmers from countries of Alt Urgell and Cerdanya. This region is well-known for its unspoilt river valleys with green meadows full of flowers. These are the source of milk ideal for the manufacture of cheese and buttter.
