Unfortified sweet Merlot red wine aged for 4 months in French oak barrels

The grapes used to make this unfortified wine come from two regions: Ronda and the Moriles Altos. At the winery the grapes are placed on “floating racks” for 3-4 days allowing a balanced drying process. The grapes are collected, bunch by bunch, de-stemmed and placed in stainless steel tanks, for a week-long cold maceration pre-fermentation. Fermentation is stopped through a cold shock (-3/-4ºC) and the resulting wine is aged in French oak barrels of various ages for 4 months. A good balance of acidity-sweetness-tannins is the key to the success of this wine. 
Bodegas Bentomiz is the adventure of a Dutch couple, fascinated by the history, soils and climate of Malaga's Axarquía. Its magnificent 'Bauhaus' style building is located in the steep foothills of the Sierra Tejada but with views of the Mediterranean; a location that enjoys a mild climate, some rain in the winters and long dry summers when the heat is softened by the sea breezes. These excellent conditions allow the vines – especially the white Muscat of Alexandria and the red Romé – to thrive. The high up old vineyards (80-100 years) produce high quality grapes, which are subtly influenced by the minerality of poor slate soils and salty sea breezes. The name of the delicate and personal “Ariyanas” wines comes from an ancient Muslim hamlet and means “fragrant, aromatic”.
