“En rama” refers to a wine that retains most of its original characteristics after aging in butts. It does not undergo cold stabilization or fining, and only undergoes a light filtration, thus keeping its qualities intact. The objective of the finos en rama is to offer the same sensory experience that is obtained when tasting directly from the butt.
This fino is a very clear representation of our Sierra de Montilla and the indigenous yeasts that favor the appearance of the veil of flor.
