Still White Wine 100% Pedro Ximénez D.O.P. Montilla-Moriles

A blended wine from different parcels in the Sierra de Montilla – Superior Quality Area. Made of Pedro Ximénez grapes variety from old vines grown in goblet-trained vines in the Riofrío Alto and Benavente areas.

Following manual harvesting and destemming, the grapes are directly pressed. Fermentation is conducted separately for each parcel in concrete vats. The wine then rests in these vats on its lees for approximately eight months, until the end of the spring following the harvest. This aging process occurs under a layer of flor yeast specific to each parcel, imparting unique characteristics to the final blend.


Alvear, founded in 1729 by Don Diego de Alvear y Escalera, is one of the oldest family wineries in Spain. The passage of time has not changed its artisan character, which has grown with consistency and without losing sight of its philosophy. Now it is the eighth generation of the family who is in charge of preserving the knowledge acquired and the values of the winery, which, as in the past, does not neglect the future either. Alvear continues to make fortified wines from Montilla, almost 300 years later, with a vision of the future, exploring the roots and the particularities of the Montilla vineyards. In addition to keeping true Spanish oenological jewels and preserving the heritage of the wineries, in 2016 the Tres Miradas Project began, still white wines that seek the expression of the terroir historically called Sierra de Montilla and recognised as a subzone of Superior Quality. These are the highest elevations of the region, with their albariza soils and plots with different orientations. It is where we find the oldest vineyards of the queen variety, Pedro Ximénez, a viticultural heritage that we want to preserve.
