The name ‘La Zarcita’ comes from the stream that runs through the Palacio Quemado estate, which flows through different plots with different types of soil and grape varieties in which Garnacha Tintorera and Syrah predominate. Both alcoholic and malolactic fermentation take place spontaneously. Each variety is fermented separately in concrete tanks. Then, each variety is also aged separately in 500L and 5000L French oak vats for 8 months. Afterwards, they are blended together.
Alvear, founded in 1729 by Don Diego de Alvear y Escalera, is one of the oldest family wineries in Spain. The passage of time has not changed its artisan character, which has grown with consistency and without losing sight of its philosophy. Now it is the eighth generation of the family who is in charge of preserving the knowledge acquired and the values of the winery, which, as in the past, does not neglect the future either. Alvear continues to make fortified wines from Montilla, almost 300 years later, with a vision of the future, exploring the roots and the particularities of the Montilla vineyards. In addition to keeping true Spanish oenological jewels and preserving the heritage of the wineries, in 2016 the Tres Miradas Project began, still white wines that seek the expression of the terroir historically called Sierra de Montilla and recognised as a subzone of Superior Quality. These are the highest elevations of the region, with their albariza soils and plots with different orientations. It is where we find the oldest vineyards of the queen variety, Pedro Ximénez, a viticultural heritage that we want to preserve.
