Wine from our old vineyards of the bobal variety at 800 meters altitude in Villanueva de la Jara (Cuenca) DO Manchuela. The grapes are harvested by hand. Cold pre-fermentation and fermentation with the grape's own yeast for 12 to 14 days with light pumping over. Malolactic fermentation and subsequent aging in tanks for 14 months with periodic batonage. No stabilization or filtering treatments to maintain the characteristics of the wine.
ANGEL BOBAL is a red wine from our bobal vineyards with a direct and frank varietal expression. Aged on its lees for 14 months in stainless steel tanks.
