RED WINE GRAN RESERVA "RESURRECTION"

Wine made with a red wine of the TEMPRANILLO, MERLOT and SYRAH 2017 vintage varieties. Each of these varieties was aged separately for a year in American oak and French oak barrels, after which these three varieties were linked together to obtain the "PACO PALOMILLO" crianza.With a selection of this wine, two new American oak barrels were filled in which it rested, aged and matured for another year, after which it was bottled at the beginning of 2020; After rolling these bottles in sheets of newspaper with the date of the day, they were buried at a depth of four meters between layers of straw and wheat flour, remaining buried for more than a year, being unearthed on Sunday of Resurrection of the year 2021, they rest in the winery for another year, until completing four years of process, of maturation and aging, until they are presented and marketed on Easter Sunday of the year 2022.

In homage to their ancestors combined with a passion for wine, Bodega Palomillo was born. An organic vineyard with more than 20,000 vines, all planted individually by husband and wife Francisco García and Inés Asensio, both from Huércal-Overa. Their wine knowledge at this stage was not extensive, but what they did have was a passion for the land, and the hope of returning to the traditions of their ancestors. Their dream was to cultivate an organic vineyard and build a winery with its own personality and to harvest a wine with character. They surrounded themselves with a team of specialist experts, which gave rise to this equation: Passion + Tradition = Está Por Venir
At the start it was quite a challenge. The unknown terrain, the different varieties of vines and the characteristic climate of the area were all steps into unknown territory. This desire to discover, to move forward... They brought this new project alive with passion and dedication. No matter the problems that occured along the way because LO MEJOR ESTÁ POR VENIR (The best is yet to come)
And so it was. After caring for the vines during the early years, they achieved the first harvest of grapes. A new and exciting challenge had opened up before the Palomillo family. It was time to collect the work of many years and take it to the bodega to be impregnated with the aromas of the El Yunco de los Gázquez mountains. After so many years of enthusiastic and passionate work by the family, the result was rewarding. A wine with history, the story of two friends, the story of a family, stories from the past and stories yet to come...
