AGING: Twelve months in medium toasted American oak barrels, after which time each variety of wine is mixed according to their percentages and then they are bottled and left for another twelve months to rest and finish rounding.
TASTING: Intense cherry red colour, it leaves a large slow-falling tear in the glass. The aromas are intense of ripe black fruits, cocoa, coffee, and vanilla. In the mouth, an incredible touch of roasted cocoa and coffee, wit
h a long aftertaste in the mouth and an intense and lasting aftertaste.
SERVING TEMPERATURE: Recommended between 15/18ºC.

PAIRING: A perfect wine to accompany the best meats.

 


In homage to their ancestors combined with a passion for wine, Bodega Palomillo was born. An organic vineyard with more than 20,000 vines, all planted individually by husband and wife Francisco García and Inés Asensio, both from Huércal-Overa. Their wine knowledge at this stage was not extensive, but what they did have was a passion for the land, and the hope of returning to the traditions of their ancestors. Their dream was to cultivate an organic vineyard and build a winery with its own personality and to harvest a wine with character. They surrounded themselves with a team of specialist experts, which gave rise to this equation: Passion + Tradition = Está Por Venir
At the start it was quite a challenge. The unknown terrain, the different varieties of vines and the characteristic climate of the area were all steps into unknown territory. This desire to discover, to move forward... They brought this new project alive with passion and dedication. No matter the problems that occured along the way because LO MEJOR ESTÁ POR VENIR (The best is yet to come)
And so it was. After caring for the vines during the early years, they achieved the first harvest of grapes. A new and exciting challenge had opened up before the Palomillo family. It was time to collect the work of many years and take it to the bodega to be impregnated with the aromas of the El Yunco de los Gázquez mountains. After so many years of enthusiastic and passionate work by the family, the result was rewarding. A wine with history, the story of two friends, the story of a family, stories from the past and stories yet to come...
