ORGANIC OAK WINE "IS YET TO COME".

- Tempranillo red wine.

- The vineyard is located in the north of Almeria, at an altitude of 980m in the area of El Yunco, Los Gázquez, Vélez Rubio. Grown on trellises in a rainfed soil composed of slate and grown organically.

- Its collection system is manual.

- Elaboration: Destemming and cold pressing of the grapes, maceration of the skins for a period of 10 days. Subsequently, malolactic fermentation takes place at a controlled temperature of 20ºC. Once the wine is obtained, it is clarified before bottling.

- Aging: 8 months in French Oak and American Oak barrels plus 6 months of rounding in the bottle.- Light wine, with very high colour intensity, garnet colour. Bright, with good tear formation.

- On the nose it is clean, with high aromatic intensity and dominance of primary and secondary aromas (oak). Berry fruit such as raspberries, blackberries, blueberries stand out. It shows blue flowers, and a balsamic background on the subtle, well-integrated wood. On the palate it is dry, with medium-high acidity, medium-high tannins, medium to full-bodied alcohol. A balanced and appetizing wine to be enjoyed on its own and a good companion to sausages...

 

 


In homage to their ancestors combined with a passion for wine, Bodega Palomillo was born. An organic vineyard with more than 20,000 vines, all planted individually by husband and wife Francisco García and Inés Asensio, both from Huércal-Overa. Their wine knowledge at this stage was not extensive, but what they did have was a passion for the land, and the hope of returning to the traditions of their ancestors. Their dream was to cultivate an organic vineyard and build a winery with its own personality and to harvest a wine with character. They surrounded themselves with a team of specialist experts, which gave rise to this equation: Passion + Tradition = Está Por Venir
At the start it was quite a challenge. The unknown terrain, the different varieties of vines and the characteristic climate of the area were all steps into unknown territory. This desire to discover, to move forward... They brought this new project alive with passion and dedication. No matter the problems that occured along the way because LO MEJOR ESTÁ POR VENIR (The best is yet to come)
And so it was. After caring for the vines during the early years, they achieved the first harvest of grapes. A new and exciting challenge had opened up before the Palomillo family. It was time to collect the work of many years and take it to the bodega to be impregnated with the aromas of the El Yunco de los Gázquez mountains. After so many years of enthusiastic and passionate work by the family, the result was rewarding. A wine with history, the story of two friends, the story of a family, stories from the past and stories yet to come...
