VINIFICATION
These century-old vineyards are harvested in 25 kg boxes to preserve each bunch of grapes in perfect condition. It is made in a small 12,000 kg tank, as the skin has more contact with the must, resulting in more colorful and aromatic wines with a high IPT (total polyphenol index) and sweet tannins during fermentation. It is then pressed and the second fermentation takes place in new American oak barrels. Once the malolactic fermentation in the barrel is finished, the wine is removed from the barrel and stabilized for its next bottling and refining process.
TASTING NOTESIntense blackberry color with violet tones with a large layer of color. On the nose, it is a very aromatic wine, intense with lots of red fruit and candy and with vanilla tones, and certain touches of black licorice. On the palate it is sweet, fleshy, enveloping with smoothness, a very fruity aftertaste, with notes of red fruits and then giving way to sweet black liquorice and light chocolate.
