Description: our “flagship”. Organic EVOO produced first week of October. We need 19 kg of olive to get 1 litre of this EVOO. Best organic Manzanilla Cacereña olives are selected and milled before 7 hours means cold extraction and with cutting-edge technologies in order to preserve all nutritional, healthy and aromatic properties.
Tasting Profile: medium fruitiness of green olive, fresh cut grass, with notes of green banana peel, apple and tomato plant. Sweet on the palate, with moderate bitter and pungent, complex, well balanced and harmonious in all organoleptic properties.
Acidity: < 0.2
Cooking recommendations: to be consumed raw with fishes, carpaccios, fresh vegetables and cod salads. To smoked, baked and steamed foods and generally in order to enhance the natural flavour of the foods.
